ROASTED MAPO TOMATOES
The perfect summer dish.
This tomato dish is truly a celebration of summer produce. These tomatoes, juicy, blistered and caramelised are smothered in a Mapo inspired dressing. Mapo is numbingly spicy and ruby red in colour, but instead of overpowering the tomatoes, it makes it shine in all its glory.
Ingredients
2 punnets of Small Truss Tomatoes
2 Cloves of garlic
1 thumb of ginger
1 Tbsp olive oil
1 Tbsp sesame oil
2 tsp Black Vinegar
2 tsp soy sauce
1 Tbsp Chilli Oil
1 Tbsp Chilli Bean Paste (Ladoubanjiang)
